French Toast Breakfast Sandwich

I came across this sandwich in downtown Manhattan over New Years in a little deli I frequented. I wanted to recreate it, and I decided to do it gourmet. Fortunately, the recipe works with any kind of bread, cheese, and meat combination you wish, so if you’d prefer cheddar and bacon on sourdough, go for it! This recipe serves two people. Enjoy!

French toast:

  • 2 eggs
  • 4 slices of Challah bread
  • 2 tablespoons of milk
  • Cinnamon, to taste
  • Sugar, to taste 

Scramble the 2 eggs, add milk, cinnamon, and sugar. Mix well. Soak a slice of bread in egg mixture on each side for a couple seconds, put on a medium heat skillet. Repeat for all slices. Once browned (usually about 3 minutes) flip the toast and let cook for another 3 minutes, until browned. Set aside.

Filling:

  • 4 eggs 
  • 4 slices of prosciutto
  • 4 thin slices of brie

Scramble the eggs and separate into two portions, put on a slice of French toast. Top with two slices of brie and two slices of prosciutto. Put the other slice of French toast on top, and ta da! You have a rather gourmet breakfast sandwich.

Make it in the campus center! Get two slices of French toast, put eggs and bacon between them. Add cheese if desired.
